It is my mother who really knows how to cook. My mother learned it from her mother also then she would cook it for us from then on. Mother has really captured the same taste that my grandmother specialized. Before, she would even cook it for others as she'd give packed and frozen callos to close friends and family during Christmas. Now that mom is no longer here, I have taken over cooking for family-gathering and I make sure it's at par with her cooking. The secret really is slow cooking - to catch the flavor. Like the callos that takes hours to cook, this recipe will take long to forget as it carries with it a lifetime of memories.

A friend of mine has been attending cooking classes since she was 12 years old. But none of those compare to the class she had right in her grandparents' home, especially since her grandmother was her teacher. She would tell her everything and even insist [on her old ways of cooking]. In making this tocino del cielo, she doesn't use a candy thermometer. When her grandmother makes the syrup, she can tell if it has reached the right temperature just by looking. My friend recounts that all those home study surely paid off. She learned a lot especially making this tocino del cielo, they're like mini leche flans, but only this time thicker and more flavorful.

It can be said that my family is a family of cooks. Our elder sister trained at the prestigious Culinary Academy; father once managed a number of restaurants; and grandmother, well, "she was always in the kitchen". This asadong manok is one of the dishes my grandmother always cooks. It's something that we always looked forward to.

A deli is the grownup's version of a toy store. All the imported cheese, cured meats, and ingredients will make you want to reign in your kitchen. This dish extends those precious meats and cheese into something the whole family can share. This pizza makes use of tortilla bread for the crust. Whenever I get the chance to hang around with my nieces and nephews during the weekends, I would really make sure that they are all pegged out when I will hand them again to their respective parents. This kind of special bond I have created with them has made me realized that I am putting something in their hearts that can't be erased with time. And after filling them, I can always have hugs and kisses in return. Just like when I made this tuna fettucine recipe during our dinner, I could hardly hear them talking because they were busy savoring the butter sauce that I have added on it. After that dinner, it was me who was dumb-founded because of the chorus of thanks that I heard from them. Such a heart warming experience that I can't forget with them.

If you have a husband who prefers to be with his drinking buddies than eating together with his family, do not nag about it. Impress your hubby with this dish and he might just go cold turkey on the nights out with his drinking buddies. After all, the easiest way to his heart is through his stomach so just fill him and he will never go astray even a single meal.



You will need:

4 slices bacon, chopped

1 small onion, chopped

2 cloves garlic, chopped

2 dozens live Manila clams, scrubbed well

2 cups beer


3 tablespoons butter

1 bunch cilantro

Salt and pepper to taste

Here’s how:

Fry bacon in a medium pot for about 3 minutes. Add the onion and garlic and continue cooking until the onion becomes translucent.

Stir in the clams along with the beer and bay leaves. Scrape bottom as you stir to get more flavor. Cover the pot and steam the clams for 5 to 10 minutes, until they open. Discard clams that remain closed.

Add butter and cilantro. Season with salt and pepper if needed. Stir gently then serve.

This easy time-friendly recipe is very much a Filipino dish with the presence of bagoong.  The cooking time of this dish is dependent on the size of the pork cubes - cut them smaller if you're pressed for minutes. If you're not into creamy stews, skip the coconut cream. A very flexible dish that can be cooked even without some of the ingredients but the taste has never been dependent in one missing ingredient. Try this and you will be surprised how you can turn everything just right. Even the cook will go nuts with its surprise! 


PORK BINAGOONGAN SA GATA

You will need:


1 kilo pork belly (liempo), cubed

2 tablespoons corn oil

6 cloves garlic, chopped

1 white onion, minced

5 small tomatoes, chopped

1/2 cup shrimp paste (bagoong)


3 tablespoons vinegar

1 1/2 teaspoons sugar

salt and black pepper to taste

3 eggplants, sliced diagonally

1/2 cup coconut cream

Here's how:


Place cubed liempo in a stockpot. Cover with water and let boil for at least 15 minutes. Prepare the rest of the ingredients while meat is cooking.

Pour corn oil into a hot pan. Saute' garlic and onions until softened. Add tomatoes and cook until softened too. Stir-fry bagoong until aromatic then put in boiled pork pieces and 1/2 cup of the boiling water used to cook the pork. Simmer until pork softens, then add vinegar and sugar and season with salt and pepper to taste. Add more pork broth if necessary.

When pork is fork-tender, add sliced eggplants and coconut cream. Bring to a boil and simmer until mixture thickens and eggplants are soft, about 10 minutes. Served with steamed rice.

When meat and vegetables are being served, with just one wink of an eye, the meat's gone. Too often, the young ones prefer meat than vegetables and this made mother's reinvent the usual individually served menu by combining dishes or even adding ingredients, making it more appealing to the eyes  of the little ones and more tasteful to their selective taste buds.

It is always good to start your day with a simple nutritious breakfast but too often because of the tight schedules, one can hardly cook a single dish just to catch up with time. I shared this same dilemma almost everyday. The easiest thing for me to do is to keep my leftover rice that evening so I would only have sinangag the following day and never hurry so much for my cooking since I would just make a simple sinangag paired with fried egg and my morning's done.

I have learned from my late grandmother that lemongrass or tanglad as commonly called here in the Philippines, has many celebrated uses. It can help prevent cancer, speedy cure to fungal infection and mosquito bite not to mention its savory goodness when added as food flavoring to most of our dishes here. Still I learned from her how to get the most of this tanglad whenever I do my cooking lessons with her. No doubt I still love to include tanglad in my cooking because I can easily find it in my backyard and even when I have to buy it, it's just so cheap that sometimes the price is just equivalent to a word of thanks.

Sungka was a part of my childhood and specifically, of our family getaways to places in the Philippines. As I grew older, the gameboard of my youth got buried deeper and deeper in our storage room and I lost touch with it. Then a few years back, I received an invitation to a friend's wedding in Baguio. Number one on my list of things to buy was a sungka. Of course, my intention was to play sungka as I did when I was a little girl. But as I was staring at the empty sky one day, an idea came to mind - why not use it to serve food? So I hosted a get-together at home and my friends had so much fun with the presentation!

The key ingredient of this recipe is native white corn - smaller, starchy and chewy cousin of the golden sweet version readily available at supermarkets. Typically, white corn is only sold at wet markets (look for it at the bananas and root crops section) but it is worth the extra effort to source white corn instead of golden sweet corn.
