Crumbly sweet toppings are sprinkled as a final layer on top of coffee cakes or muffins before baking or are sometimes used as a filling. Another term for this common topping is streusel, a German word that means "sprinkle". Such toppings consist of flour, sugar, sometimes spices, nuts, or citrus zest, and butter. The butter, either melted or cut into pieces, is worked into the flour and other ingredients to form coarse crumbs. Streusel topping bake into a crumbly or crusty texture, depending on the ingredients used.

Brown Sugar-Macadamia Nut Coffee Cake

Buttery-rich macadamia nuts have a pleasurable melt in your mouth consistency. Native to Australia, macadamia trees have been planted in Hawaii, where they flourish. Because the shells are very hard, the nuts are usually sold shelled in vacuum-packed jars or in bulk. Shelled nuts go rancid quickly and therefore should be used immediately or stored in the refrigerator. The delicious oil extracted from macadamias is extremely low in saturated fats, free of cholesterol, and high in omega 3 fatty acids, making it healthier than olive oil. The oil should be refrigerated.

As a delicious final touch, a glaze adds a hint of extra flavor and an attractive sheen to a coffee cake. To make the glaze, in a small bowl, whisk together ¾ cup (3 oz/90 g) confectioners (icing) sugar, sifted; 2 tablespoons condensed skim milk, warmed and ½ teaspoon vanilla extract (essence) until smooth and pourable. Adjust the consistency of the glaze by adding more milk, a few drops at a time, if necessary.
