Classic Brownies

Years after I first learned to make them as a child, I still enjoy making brownies. They can be made in a snap, I always have the ingredients on hand, and best of all, even dessert aficionados still rave about them!

Since  I work with so many recipes I usually have to consult my notes when I want to cook something. Not so with brownies - I can recite the list of ingredients from memory anytime!

Imagine a very colorful treat right your very eyes. The beautiful colors illuminated in your mind and you can't hardly control the wanting for it. It could be your rainbow cookies freshly baked from the oven that still spreads the delightful aroma to your senses. Each colored cookie has its own flavor and decorative edge and you can barely wait for that chance to grab all the colors to paint your hungry world.

Refrigerator cookies are made of cookie dough that is shaped into logs, chilled until firm, and sliced before baking. The great thing about them is that you can keep the unbaked logs from days to weeks in your refrigerator and even months in your freezer. Then just slice and bake when you need them.

I accidentally created this ginger thins recipe when, making a regular batch of refrigerator cookies, I mistook a jar of dried instant salabat (ginger tea) for brown sugar! Realizing my error before I mixed all the powdered ginger into the dough, I removed as much as I could and proceeded with the recipe. The result was a cookie with a spicy flavor, just like gingersnaps! If you like gingersnaps, you'll love this.

My sister just can't get rid of her cravings for sweets. It was really in her to munch something sweet almost everyday. A very sinful habit she wants to let go but just can't find the easiest way out. Sweets are just as tempting to eat as to see. She would sometimes turn her head away from looking it but she still struggles to forget it in her mind. One day, she has become so unstable that the doctor insisted on stopping her eating habit just that. She can't stand it at first but with her determination and lots of courage, she was able to do it sweetly. She manages her diet well and even substituting a whole lot of healthy options for her once awful eating habit.

Now, this is her oatmeal bread that says, "if you don't want to give something that's sweet, why not a healthy loaf of bread?" It is like satisfying yourself without having to worry about becoming unhealthy again.

I first tasted this sweet bread that's served in Germany at Christmastime when my aunt baked and gave us a loaf as a gift, and have loved it ever since. It has almonds, lemon peel and candied fruit. Try giving it in place of fruitcake some time.

In my hurry world, I always lost track of the hour especially when the work has to get done. This has been my life for years being part of the educational world. There are needs to be met both the students and administrators. I usually leave early for work and come home very late because of work again. My loving mother would always remind me of eating but when she's tired of reminding me about it, she just simply put crackers to my spacious shoulder bag. So, every time my stomach feels like crying because of hunger, there is always cracker ready for me to munch. And they are just bought crackers by mother that I may not even welcome its taste sometimes.

This has went on for years and I am just getting used to both the skipping of meals and the crackers. Until I finally decided to try making my own crackers at home so mother won't have to buy every time. These crackers I will share with you are good for snacks by themselves or with dips. The recipe is super easy!

These are easy to make with packaged frozen puff pastry. As a cheaper alternative, use pie pastry. I used to make this for myself whenever I craved something hot and cheesy! They are fine at room temperature but you can also heat them in a toaster oven before eating.

Give this trendy flatbread by itself or as an accompaniment to dips and spreads. Focaccia can be eaten alone  but it is best if its eaten together with your homemade spreads, it would enhance the look of your flatbread as much as it enhances the flavor. We often resort to making this flatbread when we feel like being idle on an evening with my family just sitting there watching movies we like while feeling the taste of focaccia on every bite. My family will always enjoy its flavor enhanced with another dish.

This is another version of something I came across at a food fair. The bread rolls are sold only partially baked, and you complete the cooking process in your toaster oven. Neat! Stuff the rolls with ham and cheese, corned beef, cooked ground beef or anything else you fancy. There seems to be a lot of filling to choose from, well, sky's the limit to your imagination with this stuffed bread rolls. Nothing feels good more than this, to be part of cooking your own meal.

Here's a novelty food gift that will surprise your friends - someone might have thought of this after seeing all those bean soup mixes in the U.S. Frankly, it doesn't taste as good as monggo guisado from scratch, but it's fun to make and give. Look in the big supermarkets for the seasonings used here. With the right ingredients comes out the right taste and just the right flavor for your guisado.

Siopao is surprisingly easy to make that's why it's a regular part of the curriculum of my nieces' cooking classes for the past five years. Long ago, we would occasionally receive small bamboo steamers filled with frozen miniature duck-filled siopao for Christmas. The beauty of frozen siopao is that you steam it only when you're ready to eat it. This recipe and suggestion for packaging borrows from that idea.
