Mashed Sweet Potatoes with Marshmallows

Who would have thought that only potatoes can be mashed and made into sumptuous dish? That's what I thought until I happened to be at the Sunday Market that seemed like heaven on earth for foodies. The best of the best is on display - the best produce, the freshest fruits, and the most delicious prepared house specialties from home cooks around the Philippines.



One of the things that I eventually tried buying in this market is what's called the orange or Taiwan-variety sweet potato.And from that time on, it has become one of my favorites when trying mashed goodies other than potatoes. This side dish is creamy, sweet, and works well with any main course from fish to heavy beef. It's also considered a complex carb - so South Beach dieters rejoice!



You will need:


1/2 kilo orange or Taiwan variety sweet potato

1/4 cup butter

1/8 cup cream

salt and pepper to taste

white marshmallows for topping

Here's how:


Peel and cut potatoes into even-sized chunks. Place in a heavy bottomed pan and cover completely with tap water.

Simmer in medium heat until potatoes are fork-tender.

Drain and mash well with the butter, cream, and seasoning. Place in an ovenproof dish and top with marshmallows.

Bake in 350oF oven until marshmallows are brown and bubbling.
