Corn-Beef Soup

Who would have thought that you could cook a hearty, rub-your-tummy-scratch-your-head meal using canned goods from your neighborhood convenience store? Try this recipe and become a true convert. If you don't have onions, omit it totally without worrying about the flavor and just mix all the canned goods together and simmer. This dish was a surprise, but even better, it's absolutely yummy. Eat alone or serve with hot toasted pandesal.



CORN-BEEF SOUP

You will need:


1 tablespoon cooking oil

2 tablespoons sliced onions

1 small can of chunky corned beef

1 can cream of mushroom soup

1  can of water (use the can of cream of mushroom to measure)

1 can cream of corn

Here's how:


Saute' onions in oil until translucent. Add corned beef and cook until the edges are a bit brown and crusty. Add cream of corn, cream of mushroom soup, and water. Mix well and simmer for around 5 minutes. Serve piping hot.
