Lechon Kawali Stir-Fry

When meat and vegetables are being served, with just one wink of an eye, the meat's gone. Too often, the young ones prefer meat than vegetables and this made mother's reinvent the usual individually served menu by combining dishes or even adding ingredients, making it more appealing to the eyes  of the little ones and more tasteful to their selective taste buds.



You can try this Lechon Kawali Stir-Fry, making pork cubes deep-fried to a crisp, and mixed with healthy greens. Instead of serving mainly meat, green veggies are being added to entice the appetite and most importantly, the meat and veggie nutrients are combined, making it one healthy main dish for children and adults alike.


You will need:


1/4 kg liempo, cubed

salt and pepper to taste

1 teaspoon Maggi Magic Sarap

cooking oil (optional)

2 tablespoons crushed garlic

1/4 cup sliced onion

1/2 cup sliced tomatoes, seeded

1/2 cup sliced button mushrooms

1/4 cup oyster sauce

4 cups kangkong cut-ups

1 red bell pepper, sliced into strips

Here's how:


Put liempo in a frying pan. Season with salt, pepper, and Maggi Magic Sarap. Cook until pork changes in color and almost dry. Continue cooking until pork turns golden brown and crispy, for about 15 minutes. Add cooking oil if necessary. Remove pork from the pan and set aside. In the same oil, saute' garlic, onion and tomatoes until limp. Stir in button mushrooms. Add oyster sauce followed by kangkong cut-ups. Cook for just 2 minutes. Add red bell pepper and cook for another minute. Remove from heat. Top with crispy-fried pork before serving.
