Cinnamon Raisin Churros

The main ingredient of baked goods is flour which is usually milled from wheat. It contains the proteins gliadin and glutenin, which when combined with liquid, forms gluten. When expanded and heated, gluten gives structure to the baked product.



Aside from flour, there are still other ingredients that are needed in baking, like: water or liquid such as fruit juices, milk, shortening, eggs, additives, leaveners, and sweetener.

Examples of sweeteners used in baking are granulated sugar, brown sugar, molasses, honey, and confectioner's sugar. In this recipe, confectioner's sugar is being used for dusting. It improves the nutrition, flavor and aroma. It even gives a richer crust and beauty to your finished product.

CINNAMON RAISIN CHURROS


You will need:


240 ml        raisin water
110 g          butter
2 g              salt
185 g          bread flour
188 g          eggs
75 g            California raisins (coarsely chopped)
2 g              cinnamon
                   Granulate sugar (as needed)
                   Confectioner's sugar (optional for dusting)

Here's how:


1. To make raisin water, soak California raisins in 1 1/4 cups hot water for 1 hour. Take 2 cups of water. Drain and set aside the soaked California raisins.

2. In a saucepan, combine water, butter and salt. When it boils, turn down the heat and add in the flour and cinnamon all at once.

3. Stir until flour is combined and does not stick to the sides of the pan.

4. Transfer the mixture in the bowl of the mixer and beat to let off the steam.

5. Add eggs one at a time until well combined.

6. Fold in the California raisins.

7. Pipe out using a half inch star tip on a piece of non-stick paper. Freeze for at least 2 hours.

8. When ready to fry, heat up oil to 171oC, fry until golden brown.


9. Dip in granulated sugar mixed with cinnamon.

10. Sprinkle with confectioner's sugar.
