Filipino Green Mango Salad with Raisins and Spicy Salted Fish

Filipino mangoes are said to be distinct in its taste. Its sweetness has been told in many Filipino legends and  it came out to be the, "Philippine National Fruit". How it got its unique taste is not as important now especially if you will taste its sweetness. But this is only true with the ripe ones. Unripe green mangoes are usually sour and   distasteful to eat. But what will happen if we will combine the green unripe mangoes with the rest of this recipe ingredients? We will know it when we will give ourselves a try in making this recipe.

You may realize that this recipe can also be done using your country's own variety of mango. Do not limit your cooking creativity, explore your ideas and you will enjoy the art of cooking.



You will need:


Basic sweet dough:
200     g            whole cherry tomatoes (washed)
60       g            red onion (fine rings)
                        (Green mangoes, peeled, scooped with melon baller)
8         g           shrimp paste (cooked)
15       ml         calamansi juice
1         pc         red egg (rings)
60       g           California raisins
25       g           pickle relish
120     g           cottage cheese
                        salt to taste
                        black pepper to taste
60       g           Roasted peanuts (coarsely chopped)
                        Spicy salted fish flakes
15       g           Cilantro leaves for garnish

Here's how:

1. In a mixing bowl, combine the tomatoes, onions, green mangoes, calamansi juice, cottage cheese, California raisins, pickle relish and shrimp paste. Mix well. Transfer into a salad bowl.

2. Sprinkle peanuts, spicy salted fish flakes and place one slice onion ring. Place a slice of red egg on top of the heap, and garnish with cilantro leaves.

3. Season with and pepper to taste.
