Guinataang Halo-Halo

A bowl of this can provide the ultimate comfort, especially on a rainy day. This is the usual recipe that Filipinos love even if its not rainy at all. With just the smell of jackfruit on it, you will feel like eating not just a bowl of this guinataang halo-halo.


Good news: This thick and slightly sweet soup is very easy to prepare.

GUINATAANG HALO-HALO

You will need:


1 cup glutinous rice powder

2 cups water plus 1 cup water

2 cups thick coconut milk

1/2 cup each cubed sweet potato and yam

1/2 cup cubed saba banana

1/2 cup cooked small sago (tapioca)


1/4 cup fresh jackfruit meat

sugar to taste

Here's how:


Mix 1 cup glutinous rice powder with 2 cups water. Form mixture into small balls. Set aside. In a pot, mix together 2 cups thick coconut milk and 1 cup water. Bring to a boil. When liquid comes to a boil, drop in the glutinous rice balls to cook. When halfway done, add 1/2 cup each of cubed sweet potato and yam, and cook until softened. Add 1/2 cup cubed saba banana, 1/2 cup cooked small sago (tapioca) and 1/4 cup fresh jackfruit (langka) meat that has been sliced into strips. Bring to a boil and let simmer for a few minutes. Add sugar to taste and serve hot.
