Chorizo Stew

Stews served with rice make for a hearty meal anytime, but meat-based stews take quite long to make. In this recipe, sausage or chorizo - cuts down the cooking time while still supplying protein. Would you believe that this takes only 25 minutes to cook? It may not be instantly done but you can really save a lot with time but the nutrition is not limited.



CHORIZO STEW

You will need:


2 tablespoons garlic, chopped

2 pieces chorizo de Bilbao, sliced

2 medium potatoes, boiled

¾ cup garbanzos

½ cup green olives

1½ tablespoons tomato paste

1 can diced tomatoes

½ cup water

1 teaspoon paprika

salt, pepper, and sugar to taste

Here’s how:

1) In a pan, sauté’ garlic in olive oil. Add chorizo slices and cook until crispy. Add the potatoes, garbanzos, and olives. Stir.

2) Add tomato paste and saute’. Then follow with the diced tomatoes, water, and paprika. Bring to a boil and simmer for 10 to 15 minutes until potatoes soften. Season with salt, pepper, and sugar.

3) Serve with rice or garlic bread.
