Spicy Gourmet Tuyo

If you like the gourmet tuyo that is available in supermarkets, here's a very easy way to make your own. You will notice that even for the first time you will serve this to your friends, they will immediately say they would order if you care to sell it! For gourmet tuyo that's not spicy, just omit chilies.



SPICY GOURMET TUYO

You will need:

¼ kilo tuyo
½ cup olive oil
½ head garlic, peeled and sliced
2 or 3 pieces small red or green chilies (siling labuyo), 
   thinly sliced
2 tablespoons sliced green olives
1 red pepper, roasted over a flame, peeled and
   cut into thin slices

Here's how:

Remove the head and tails of the tuyo. Carefully remove the long spinal bones, keeping the fillets intact and scrape off all the scales with a knife. Heat the olive oil in a wide saucepan. Add the garlic and red or green chilies, cooking until garlic just begins to turn light brown. Add the tuyo and heat through, being careful not to break them. Add the capers, green olives and red pepper, combine gently and remove from the heat. Transfer to sterilized bottles when cool.
