Galantina

I used to occasionally see deboned chicken in the supermakets. If you have a source for deboned chicken, or know how to debone one yourself, this makes an easy, elegant gift because the stuffing calls for simply mixing all the ingredients together. To make this into a perfect gift for an occasion, wrap the entire basket in sinamay and tie opening with a colorful bow. Attach gift tag or label.



GALANTINA

You will need:

1 deboned chicken (about 1 kilo)
Juice of 1 lemon or lime
Salt and pepper

½ kilo ground pork
3-4 cloves of garlic, crushed
1 onion, finely chopped
2 eggs, beaten
½ cup raisins

¼ cup chopped green olives
2 tablespoons chopped pimiento
2 tablespoons Worcestershire sauce
1 tablespoon salt
½ teaspoon pepper

Here's how:

Rub the chicken with the lemon or lime juice and season inside and out with salt and pepper. Combine all the remaining ingredients and stuff the cavity of the chicken, inserting the hard-boiled eggs in the middle. Sew up the opening using a large sewing needle and thick thread and tie the ends of the legs together. Roast the chicken at 350oF for 1½-2 hours or until golden brown. When cool, wrap completely in two layers of aluminum foil and chill.
