Pumpkin Soup

Having a hard time blending your food? Stick blender is one handy tool! Just a few safety tips: Do not use while pot is directly on the flame. Also, use an extension cord if your plug is too far away from the counter. Better to avoid the mess than have to clean it afterwards. So, you will have a clean food less the mess in preparing this pumpkin soup.



PUMPKIN SOUP

You will need:

1 clove garlic, crushed

1/8 cup chopped onions

1 rib celery, diced

1/4 cup carrots, diced

4 cups of peeled and medium-diced kalabasa

6 cups of water

1 chicken cube

salt and pepper to taste

3 tablespoons heavy cream for topping (optional)

croutons for toppings (optional)

Here's how:

1) In a  heavy pot on medium to low heat, saute' garlic and onions in oil until soft and fragrant. Do not allow them to brown. Add celery and onions.

2) Add pumpkin, water, and chicken cube. Simmer until veggies are tender. Season well with salt and pepper and use your stick blender to puree into a smooth consistency. You may add more water if soup is too chunky. Top with a swirl of heavy cream and croutons. Serve hot.
