Raisin Mocha Mamon

From my cooking class, I've learned that there are three kinds of flour: bread flour, we use this especially in breads, and other yeast-raised products because of its high gluten strength; all purpose flour, this is used for general cooking, also in cakes and breads and it has medium gluten strength; cake flour, we use this in light bakery products like cakes, cookies and some pastries because of its low gluten strength.



For this recipe, it is important to use cake flour so to bring out the best in your raisin mocha mamon. Or may be you can try an experiment using other kinds of flour and see the difference for yourself. Good luck!


You will need:


210 g          cake flour
100 g          sugar
10 g            baking powder
125 ml        corn oil
125 ml        water
9 g              instant coffee powder
120 g          egg yolks
245 g          egg whites
150 g          sugar
.5 g             cream of tartar
120 g          California raisins (soaked in hot water)
                   Softened butter (for brushing)
                   Granulated sugar (for topping)
                   Grated cheddar cheese (for topping)

Here's how:


1. Preheat oven to 177oC.

2. Grease 15 mamon molds generously with butter. Set aside.

3. Soak California raisins in hot water for 10 minutes. Drain and set aside.

4. Dissolve instant coffee powder in water. Set aside.

5. Sift the cake flour, sugar and baking powder 3 times. Transfer in the bowl of the mixer and add coffee mixture, corn oil and egg yolks. Stir until smooth. Fold in the California raisins.

6. In a separate bowl, beat egg whites and cream of tartar until stiff but not dry. Fold in to the yolks mixture until no more streaks of egg white remains.

7. Divide into the  prepared molds.

8. Bake for 25-30 minutes or until done.

9. Transfer on wire racks to cool slightly for about 5 minutes. Remove from molds and then brush with softened butter.

10. Top with granulated sugar and grated cheddar cheese.
