In the Philippines, the province of Bukidnon has been known for its beautiful scenic spots, cool weather, and world class recreational pride where the longest zipline in Asia is located. Ziplining here has drawn much attention to people, for locals and foreigners alike. But what fascinates them the most was the vast plantation of pineapples that fills up almost all the land fields of the province.



Maybe if you will try this pineapple upside-down cake you will not only be fascinated with what you see but eventually what you will taste. This would be easy to do and the ingredients can be found anywhere and this works with any variety of pineapple you can find in the market.  .





You will need:


1/3 cup butter
3/4 cup brown sugar
6-8 slice pineapple
Maraschino cherries
1 cup sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
5 egg yolks
2 tablespoons cold water
1 teaspoon vanilla
1/2 cup sugar
5 egg whites1/2 cup sugar
1/2 cup sugar

Here's how:


Preheat oven to 350oF. 


Melt butter in a 13x9x2-inch rectangular pan or a 10-inch round pan. Over this, sprinkle the sugar then arrange the pineapple slices and maraschino cherries. Set aside.


Sift flour, baking powder, and salt. Set aside. Beat egg yolks with cold water and vanilla until thick. Gradually add sugar and beat until lemon-colored. In a separate bowl, beat egg whites until soft peaks form. Add sugar and continue beating until stiff. Fold egg yolks alternately with flour mixture into beaten egg whites. Pour into prepared pan. Beat for 20-25 minutes. Invert on serving platter.
