Darling in the Kitchen

I remember the summer after I turned 11 years old. I had been watching my mom bake and cook for years. Sometimes she would let me help. But that summer, I made my first solo attempt at baking. When I proudly presented my orange chiffon cake for my brother to taste, he sincerely complemented me with "This is the most delicious banana cake I have ever tasted!" Challenged by my brother's unintentional put down, I begin to practice often.



It was a good thing that I persevered despite my brother's well-meaning comments. The kids in your family need not suffer the same fate that I did. Now that school's out and summer's here, it's your chance to kindly initiate them on the culinary path. Let the little ones decide on what the family will have for merienda, and have them make it. This helps develop their creativity, patience and organizational skills. Skills that will definitely help build their character. It is also good for married life and will earn beauty points in courtship.

The younger children can be started off by asking them to pass the sugar, flour and chocolate as you bake their favorite chocolate chips oatmeal cookies. It is always a treat for kids to lick the spatula and the bowl after everything has been spooned onto baking sheets. Soon they'll be asking to be the ones to mix the batter. Allow them to do the measuring but remember to put the dry ingredients and the measuring cup on top of paper to make clean up easier. Just be ready to step aside, and just supervise them when they ask to do it all by themselves.

You can try Baked Beef Tortilla and Chocolate Chips Oatmeal Cookies that are fairly easy to prepare. The kids will have fun. The dishes are so flexible that in Baked Beef Tortilla Roll you can substitute the beef with any other meat of your choice. Or, add other ingredients such as bell peppers, mushrooms, carrots or corn.

BAKED BEEF TORTILLA ROLL

You will need:

2 tbsp                   olive oil
2 pc                      garlic cloves
100 g                    white onion, finely chopped
2 pc                      ripe tomatoes, finely chopped
250 g                    ground lean beef
1/2 tbsp                chili powder
1/4 tsp                  freshly ground black pepper
1/4 tsp                  iodized salt
4 pc                      12 inches flour tortilla
1 cup                     grated mozarella cheese
1 cup                     grated cheddar cheese
1/2 cup                  bottled salsa (mild)

Here's how:

1. Preheat oven to 350 degrees F.

2. In a saute' pan, heat olive oil over medium heat. Add garlic, onion, and tomatoes. Saute' for 5 minutes.

3. Add ground lean beef and saute' for 3 minutes or until beef has browned.

4. Add chili powder, freshly ground pepper and salt. Let it cool.

5. Divide beef mixture into 4 parts. Lay out one flour tortilla on a cutting board and arrange in the center the 1 part beef mixture and 1 tbsp grated mozzarella cheese and 1 tbsp grated cheddar cheese.

6. Fold the side and roll the tortilla.

7. Repeat the procedure again with the 3 remaining flour tortillas.

8. Arrange the rolled tortillas in a 9 x 9 oven-proof dish pan. Pour the salsa on top of the tortillas and topped it with the remaining mozzarella and cheddar cheese.

9. Bake the tortilla in the pre-heated oven for 20 to 25 minutes. Serve.

CHOCOLATE CHIP OATMEAL COOKIES

You will need:

2 1/2 cup                    all purpose flour
1/2 tbsp                      baking soda
1 tsp                           baking powder
1 cup                          butter
1 pc                            egg, large
1 tbsp                         vanilla
2 cup                          brown sugar, packed
1 tsp                           ground cinnamon
1 tsp                           iodized salt
1 cup                          rolled oats (old fashion)
1 1/2 cup                    semi-sweet chocolate chips
1 1/2 cup                    cashew nuts, chopped

 Here's how:

1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper. Set aside.

2. In a bowl, sift all-purpose flour, baking soda, and baking powder. Set aside.

3. In a separate bowl, mix together until well blended the butter, egg, vanilla, brown sugar, cinnamon and salt. Gradually add the dry ingredients to the wet ingredients. Mix well.

4. Using an ice cream scooper, scoop cookie batter onto the lined baking sheet, 3 inches apart. And bake for 12 minutes or until golden brown.

5. Remove cookies from the oven and transfer them to a wire rack. Let it cool completely. Serve.
