Chicken with Chinese Sausage

On our way to the Zip Line Zone. We saw a vast plantation of pineapple. One would really be mesmerized with its beauty and vastness. I was just really wondering where would all these pineapples for. I know they could be eaten raw but people all over the world would not be probably so interested eating them fresh because of that acidic feel in their mouths after eating pineapples. There must really be reasons for spending thousands in  maintaining such a vast plantation. Just then I saw from a post that reads, "Ang ulam na may Pineapples, nagiging SUPER ULAM" (Viand with pineapples, becomes SUPER VIAND).


Got this idea to feature viands that includes Pineapple in their ingredients. You will surely love this!

Chicken with Chinese Sausage

You will need:

1/2     kilogram chicken thigh, cut into small chunks
2        pouches Del Monte Pineapple Tidbits (115 g each), drained (reserve syrup)
1        tbsp minced garlic
3        tbsp chopped onion
1/4     cup sliced Chinese sausage
1/2     cup sliced carrots
1/4     cup sliced red bell pepper
1/4     cup sliced green bell pepper
3        tbsp oyster sauce
1        tsp rice wine (optional)
2        tsp cornstarch, dissolve in 1 tbsp water

Here's how:

1.  Marinate chicken in 1 tsp iodized fine salt (or 1 tbsp iodized rock salt), 1/8 tsp pepper and pineapple syrup for at least 30 minutes. Drain, reserve marinade.
2. Saute' garlic and onions in 1 tbsp oil. Add in sausage and cook for a few minutes. Toss in chicken and stir-fry until chicken is almost done.
3. Add vegetables, oyster sauce and marinade. Cook for another 3 minutes. Add wine, Del Monte Pineapple Tidbits and cornstarch. Simmer until thick. Serve.
