Asian Pork Fried Rice Dinner

By Juvy S. Iliwiliw

New food pyramid guidelines recommend adults get at least three servings of whole grains everyday.  This recipe joins the call in providing families with easy, delicious and wholesome options for incorporating whole grains into balanced diet. You can make this recipe even more easier. Feel free to substitute your favorite frozen vegetables or vegetable blend. Increase cook time until vegetables are tender and then your Asian Pork Fried Rice Dinner will be ready to help you fulfill the recommended diet each day.

You will need:

1 pound pork tenderloin, cut into very thin strips

1 tablespoon Bertolli olive oil

1 small sweet onion, finely chopped

1¾ cups water

1 package Knorr-Lipton Sesame Chicken Rice Slides

2 eggs, slightly beaten

1 red bell pepper, cut into very thin strips

2 green onions, thinly sliced

Here's how:

1) Cook pork in large skillet with olive oil over medium-high heat about 3 minutes or until done, stirring occasionally. Remove and set aside.

2) Add onion to skillet and cook 3 minutes or until softened, stirring occasionally. Stir in water and Knorr-Lipton Sesame Chicken Rice Slides and bring to a boil. Reduce heat and cook covered for 12 minutes.

3) Combine eggs and green onions. Pour egg mixture over rice and cook covered about 2 minutes, until eggs begin to set. Stir in red pepper and reserved pork and cook until heated through.
