Crostini with Hot Garlic Spinach Spread

Eating would be a lot of fun if you will add a simple touch with what you will serve to your family. To make your bread delightful to the taste, I have added here a spread recipe to give beauty to the usual crostini.

Placing the garlic spinach spread in a turbo broiler just before serving gives a nice golden brown crust. No broiler? You can serve it after taking it off the heat.



CROSTINI WITH HOT GARLIC SPINACH SPREAD

You will need:

2 tablespoons olive oil

1/2 cup garlic, minced

2 tablespoons butter

1 tablespoon flour

1/4 cup heavy whipping cream

3/4 cup frozen spinach, thawed, rinsed under running water

1 pack (100 grams) freshly grated Parmesan cheese

1/4 cup freshly grated cheddar cheese

1/4 cup sour cream

salt and freshly ground black pepper to taste

1 baguette, sliced into 1/2-inch-thick pieces, brushed with olive oil and toasted

Here's how:

1) In a medium saucepan over low heat, sweat minced garlic in oil.

2) Add the butter and turn up the heat to medium. Stir in the flour, making a  roux: cook the mixture, stirring occasionally, for 2 minutes.

3) Stir in the cream and then add the spinach. Turn off the heat. Add the cheeses and sour cream. Season to taste with salt and pepper.

4) Transfer to an oven-safe container. Place under a broiler until the surface turns a light golden color. Serve immediately with the crostini.
