Rainbow Cookies

Imagine a very colorful treat right your very eyes. The beautiful colors illuminated in your mind and you can't hardly control the wanting for it. It could be your rainbow cookies freshly baked from the oven that still spreads the delightful aroma to your senses. Each colored cookie has its own flavor and decorative edge and you can barely wait for that chance to grab all the colors to paint your hungry world.




You will need:

1½ cups butter
1½ cups powdered sugar
3 1/3 cups flour

¼ teaspoon salt
½ teaspoon each vanilla, almond, orange and
    strawberry flavoring
A few drops yellow, green and red food coloring
½ cup each chopped nuts, colored sprinkles, colored sugar, desiccated coconut
    (sprinkles and colored sugar are available at cake decorating supply stores)

Here's how:

In a mixing bowl, combine the butter and powdered sugar. Blend in the flour and salt. Divide the dough into four parts, adding vanilla and yellow food coloring to one part; almond flavoring and green food coloring to a second part; orange flavoring and both yellow and red food coloring to a third part; and strawberry flavoring and red food coloring to a fourth part. Shape each dough into a log 2 inches wide. Roll each log in a different ingredient (nuts, sprinkles, sugar, coconut) to coat it. Wrap each log in wax paper and chill until firm. Cut into thin slices and place on ungreased baking sheets. Bake at 350oF for 10-15 minutes or until underside is brown.

Yield: 8 dozen cookies (2 dozen of each color)
Preparation time: 20 minutes
Cooking time: 10-15 minutes
Storage time: 2 weeks in an airtight container
Packaging ideas: Put the cookies in clear disposable plastic containers, or in plastic jars with tight fitting lids. If using the latter, you can hide the typical yellow lid by wrapping it loosely with colorful tissue and gathering it up with a bow on top.
