Since man has started cooking food, curing or smoking has been around. Initially it was for preservation purposes, since refrigerators were not yet around, man had to find other ways of making food last. Smoking food is still being practiced until today, but not to preserve it but to make it taste better. The smoke gives the meat a distinct flavor that changes and improves the normal taste of things. More often than not, fish and meats are the ones that are smoked, but cheeses, vegetables even fruits can be smoked.
