Chunky Chicken Pasta

Everyone in my family really look up to another beautiful Monday evening where all of us would be together in having our Family Home Evening. Its a fun-filled yet spiritual and meaningful program of our church to be conducted at home and has become my family's tradition held during Monday evenings. Family Home Evenings would greatly help to sustain the unity and love within the family. And with our busy schedules everyday, its good to unwind and fill the home with just laughter and fun .

My father and mother would not only try their best to make Family Home Evenings funny but satisfying as well. And one of the things that we look forward to this activity especially the children are the sumptuous food that would be prepared during the refreshment time after the closing prayer.

One Monday evening can never be forgotten because of the food that was being prepared on the table that evening. Adult and children really enjoyed not just the program but even the Chunky Chicken Pasta. I realized that family events are best remembered and cherished if its being served with what everyone wants. We all love spaghetti and that's what made one evening worth remembering.

You will need:

1/2        kilo Del Monte Spaghetti
             cooked per package directions
2           tbsp.   cooking or olive oil
350       grams chicken breast, deboned and diced
3            medium eggplants, cut into cubes
1            chicken bouillon cube
1            large onion, cut into wedges
1            each red and green bell peppers,
              cut into strips
6            cloves garlic, minced
1            pouch (750 g) Del Monte Italian Style Spaghetti Sauce
1/2         tsp. ground cayenne pepper (optional)

Heres how:


1. Saute' chicken in oil until brown. Add eggplants, bouillon cube, onion, bell peppers and garlic. Cook for 3 minutes, while stirring.
2. Add 1 tsp. iodized salt and remaining ingredients except spaghetti. Cook for 10 minutes. Pour over or mix with cooked Del Monte Spaghetti. Sprinkle with grated Parmesan cheese if desired.
